Egg Recipes

Christine’s Egg Crumble



  • 4 Large Free Range Eggs
  • 2 Sausages, grilled and chopped
  • 1 Rasher, lightly grilled and chopped
  • 1 small tomato, grilled and chopped
  • 2or 3 Mushrooms, grilled and chopped
  • 1 Tbsp Olive Oil
  • Salt and Pepper


Heat up the Grill and put on the sausages, rasher, tomato and mushrooms. According as these are cooked remove them from the grill, chop and keep them aside in a warm bowl.

Put the olive oil into a non-stick frying pan and bring to a medium heat. Beat the eggs, add salt and pepper and pour into the warm frying pan. Keep this mixture stirred with a wooden spoon until it begins to cook forming a crumble like appearance. Gently mix in the grilled ingredients and continue cooking and stirring. When the beaten eggs have totally dried up turn out into a large warm bowl and serve with brown bread or toast.

Sprinkle a little grated cheese over the top for added flavour and protein!!

Ham, Cheese & Pepper Frittata



  • 6 Free Range Eggs, lightly beaten and seasoned
  • 150g cooked ham, diced
  • 100g cheese, grated
  • 1 pepper, chopped
  • 1 tbsp olive oil
  • Salt and Pepper


Turn on the grill and heat it up. Beat the eggs and pour them into a non-stick frying pan, add the pepper, ham and cheese.

Cook this on the hob until the base is set, then place the pan under the grill to cook the top.

Enjoy your super quick meal that’s very tasty! If there is any leftover put it in a lunchbox and store in the fridge to use the next day.
